Pasta Masterclass #1 How To Make Tortelloni

My wife bought me a pasta machine for Christmas and I have since been on a mission to make stuffed pasta at least once a week – with varying degrees of success. My first efforts were thick and rubbery; my subsequent endeavours were rather clumsy and rustic.

So instead of soldiering on, I got help from the experts.

Giacobazzi’s deli in north London is a family shop run by a wonderful couple called Raff and Renata since 1991.

Raff comes from the Apennine mountains of Northern Italy, in between Modena and Bologna. Renata is London born but is very proud of her Italian blood! Her mother was from the same village as Raff and her father is from Parma.

After marrying and living in Italy for three years, they decided to come to London,as Renata was convinced that she was not the only one who would love to eat Raff’s food!

Now they make everything from anti-pasti to fresh pasta, and sell everything from Parma ham to porcini mushrooms, from pecorino to burata. If it’s superb quality Italian you’re after, Giacobazzis is the place to go

After reading about my efforts to make stuffed pastas, Renata invited me along for a masterclass with Giacobazzi’s pasta master, Nicos.

And so, this week, I was treated to a hands-on demonstration in the arts of making tortelloni and ravioli.

This is the first of those lessons…How to make Tortelloni

1. First make your pasta dough. Recipes vary, but mine for 4 people is 200g sieved tipo 00 flour, 2 whole eggs, 2 egg yolks. Bring together to form a dough. Knead for 10 mins. Set the pasta machine to the widest setting. Feed the dough through five times, then reduce the setting. Keep feeding and reducing the setting until you get to the thinnest setting.  Cut the sheets of dough down as you go along to keep them manageable. At the end of the process you should have several sheets of pasta, approx. 1 mm thick.

2. On a floured surface, lay out a pasta sheet approx. 10 cm wide and 60cm long. Use a pasta wheel to cut the sheets into approx. 10cm x 10cm squares.

3. Take a spoonful of your pasta filling (Nicos used ricotta, mushrooms, Parmesan and freshly ground black pepper) and place in the centre of the sheet. Do this  approx. six times at equal intervals.

4. Now it’s time to fold. These pictures – and the video above – tell the story better than any words I could write.

Masterchef Exclusive: A cooking masterclass with 2011 champion Tim Anderson

Sometimes this blogging malarkey ain’t all bad – and last night was one such time.

Myself and a handful of other Handpicked bloggers (RedTedArt, CrumbsFeedYourFamily and Nixdminx to name but three) were invited by toothpaste giants Oral-B to a cookalong evening with Masterchef 2011 winner Tim Anderson.

No money changed hands, and this is not a sponsored post. What I write is how I saw it, with an honest hand on heart.

Now recipes involving 34 ingredients are right up my street. But there is one ingredient that I can’t work with because it might do something nasty to me: fish. Not seafood, but the back-boned variety. So the evening got off to a bit of an embarrassing start when I saw the menu of delights that were going to test us.

The first involved slabs of fresh tuna, which looked amazing, but made my lips blister just looking at it.

After declaring my mortification and duly sat out the first of the dishes, we moved onto the next: Hen’s Nest of Tea-Stained Egg, Leek Bhaji and Chana Masala Puree.

Yes, it sounds like a mouthful – and it was. A delicious, tastebud-tingling mouthful.

Tim is famous for his wizardry, naming Heston Blumenthal as one of his inspirations, and is a lover of Japanese food.

I’m not going to publish the whole recipe, just the egg component (scroll down) because to list the whole thing would cause my fingers to seize up from typing. But the egg stands alone as a stand-alone. The most incredible yolk you’ll ever see.

But first, I asked Tim for his 3 Favourite Ingredients and how we could use them at home (one of them is beer!)

Now for the Tea-Stained Egg Recipe…

You’ll need…
3 eggs
5g chai tea
300ml water
15ml soy sauce
10ml rice vinegar
0.1g saffron

1. Cook the eggs in rapidly boiling water for exactly 5 mins, then refresh by running under cold water for 2 mins.

2. Boil the water and combine with the tea, soy sauce and saffron.

3. Allow this mixture to cool, then peel the eggs and marinate for 24 hours.

So what was the purpose of this event? Big companies don’t invite us bloggers along to something so special out of the goodness of their hearts.

Well, they were nice to me, so I’m going to be nice to them.

We were given a free tube of the stuff to try for ourselves. Which was nice, though the cooking masterclass from Tim Anderson was better!

Pants: An ironing masterclass

I have just been on Radio 4′s Woman’s Hour talking about life as a Stay-At-Home-Dad, during which I happened to mention that I iron pants. Yes, pants. Underpants, knickers, boxer shorts, whatever.

This has been met with incredulity by many people. Why on earth would I do such a weirdo thing? The clue is in thye question!
