Recipe Shed: Spicy Lamb Filo Parcels

I love the versatility of mince. And I love lamb samosas. Put the two together and Hey Presto! Mince magic. I’ve stopped short of calling these ‘samosas’ because when I tried to make the triangular parcles, I screwed up. So instead, I give you square filo parcels. They taste just as good, but perhaps aren’t as aesthetically pleasing. Hope you enjoy them.

Makes 4 hearty parcels

2 tsp oil
500g lean lamb mince
1 onion, finely chopped
Thumbnail-sized piece of ginger, peeled and finely chopped
3 garlic cloves, finely chopped
2 tsp Madras curry powder
1 cup of frozen peas
1 pack of filo pastry, defrosted
