Recipe Shed: Burns’ Night Haggis-Stuffed Mushrooms with Whisky Cheddar

I love the peppery savoury flavour of haggis and it goes brilliantly with the earthiness of mushrooms. This recipe has only got 4 ingredients and is about as easy as possible to make. Just scrape out the stalk and ribs from a couple of big field mushrooms, chop some haggis into chunks and stuff the mushrooms. Bake in the oven at 180C/Gas 4 for 2–25 mins, then crumble on some strong cheese and bake for a few more minutes until the cheese melts. I’ve used a cheddar infused with single malt whisky. Serve on toasted sour dough bread. Happy Burns’ Night!
